Bermondsey Square Hotel restaurateur Gregg Wallace admits his love of Angel Delight Bermondsey Square Hotel restaurateur Gregg Wallace admits his love of Angel Delight

Television presenter and restaurateur Gregg Wallace has spoken of his love of butterscotch-flavour Angel Delight, his strangest food experience eating roast quail with chocolate cake and why he hates barbecues.

In an interview with the Independent on Sunday newspaper, the 47-year-old, who has just opened a new venture at the Bermondsey Square Hotel near the south bank of the River Thames, said Angel Delight is one of the dishes now available on the menu.

Served in a shot glass as a pre-pudding, the favourite from Wallace’s childhood features alongside new takes on dishes including spam fritter, chicken kiev, and knickerbocker glory.

As well as admitting that a McDonald’s Big Mac is his guilty pleasure (although he doesn’t actually have them that often since getting married), the MasterChef presenter revealed to the Independent that he detests summer barbecues, believing them to be “part of a plot to destroy food in Britain”.

He said: “Men who only go into the kitchen to throw away empty beer cans suddenly think they have mastered one of the most difficult cooking techniques known to man.”

And while many of the dishes on offer at Gregg’s Table restaurant and bar were often placed on tables in the 1970s, trained chefs are now in charge, offering diners a new take on traditional favourites while they relax in one of London’s top luxury hotels.

The Bermondsey restaurant, which opened to the public on February 27, is a joint venture between Gregg Wallace and Robin Sheppard, the chairman of Bespoke Hotels, which owns manages The Bermondsey Square Hotel. It is large enough to seat 90 guests indoors, although there is room for a further 100 diners in Gregg’s Table’s outdoor eating area.

Guoman Hotels’ The Grosvenor Hotel Victoria uncovers the ‘Courtesan’s Boudoir’

Guoman Hotels’ The Grosvenor Hotel has revealed its past connection to one of the most risqué residents of 1870s London, with the launch of its opulent ‘Courtesan’s Boudoir’. The Parisian-inspired Suite has been tenderly created in homage to one of the grand railway hotel’s most infamous visitors – the scandalous courtesan, Miss Cora Pearl.

A lady notorious with entertaining only the highest members of social standing, including royalty, Cora Pearl was one of the most feted courtesans of her time. In the 1870s, Cora made a rare visit to London and, after arriving at Victoria Station (the gateway into London at that time), booked a Suite at The Grosvenor Hotel, only to be immediately refused entry when stories of her illicit and hedonistic lifestyle surfaced.

The Grosvenor Hotel’s 150th anniversary year sees the hotel uncover the glamour and overindulgence of the courtesan’s lifestyle by opening the doors of the specially-designed, rococo-themed Suite for the very first time.

Unveiled On February 23rd – the date of Cora’s birthday – the ‘Courtesan’s Boudoir – The Cora Pearl Suite’, has drawn its inspiration from the opulent French interior styling of the late 1800s. Found on the second floor where the most expensive rooms were originally located, the spacious room features a stunning two-foot high oil painting of Cora herself, glass chandeliers, feather trimmed lamps, an overstated dressing table, custom made floor fittings and silver finished French inspired furniture.

The focal point of the Suite is a free standing ‘infinity’ bath, elevated on a marble tile plinth. The bath tub is a replica of the personally engraved, bronze bath that Cora had specially cast for her in Paris which she famously filled with vintage champagne in which to bathe with her suitors.

Katie Hickman, historian, novelist and author of the bestselling biography ‘Courtesans’, collaborated with Guoman Hotels to ensure the true spirit of Cora was depicted within the creation of the Suite.

Katie believes the ‘Courtesan’s Boudoir’ embraces the extravagance of high-class social circles of the time and reflects absolute Victorian glamour. She commented: “I’m very confident Cora would have loved the idea of a Suite created in her honour. It gives her the limelight she truly deserved and brings to the foreground a time in women’s history where barriers of class, sexuality and independence were challenged. With all its lavish finishes and close attention to Cora’s passions, the Suite certainly represents the hedonistic lifestyle Cora herself enjoyed.”

Marking Cora’s date of birth and to coincide with The Grosvenor Hotel’s 150th anniversary, the hotel is opening the ‘Courtesan’s Boudoir – The Cora Pearl Suite’ suite on 23 February 2012.

Further details and booking information can be found at www.guoman.com/cora_pearl.

Perseverance And Hard Work Lead To Success, Says Bespoke Hotels Boss

Working hard and sticking at it are two of the main reasons behind the success of one of the UK’s leading luxury hotel groups, according to its chief executive.

Bespoke Hotels was established in 2000 and over the past 11 years the group has grown from having three properties to managing 52 across Britain, Europe and the Caribbean. Speaking to BusinessesForSale.com, Bespoke’s founder and chief executive Haydn Fentum said being flexible and appreciating that all hotels have key differences are some of the most important things to remember.

He said: “If I had to choose one word to explain our success I would probably choose flexibility. By listening to our clients and the hotel owners, we make sure we apply the right level of service to a particular property.

“We adapt well and that’s where we’ve won out over branded operators, because our properties are all idiosyncratic and quite unique to their location. We take a more bespoke or tailored attitude towards running those businesses. We’re not a one-size-fits-all hotel group.”

It is this approach of providing guests with unique experiences, matched with the best of British hospitality and the best possible facilities that has earned Bespoke Hotels an enviable reputation.

With properties that range from country house accommodation to boutique hotels in the centre of London, Bespoke Hotels has made sure that individuals, couples, families and business clients are all catered for. Every one of the group’s luxury hotels has its own character and charms, whether that’s helped by the addition of a luxurious spa, exquisite interior design or access to one of the best golf courses in the UK.

Haydn added: “Each hotel is specific and you need to play to your strengths. So we encourage the managers to push hard in areas where they know they’ll get success.”

The Grosvenor Hotel Goes Back To Its Roots With Victorian Themed Cocktails

Guoman Hotels has announced that the Grosvenor hotel’s stylish new Reunion bar will be offering an exclusive limited edition Victorian themed cocktail menu throughout December.

Inspired by the Victorian era when the historic London hotel was originally built, guests can enjoy a delicious ‘Penny Black’, ‘Dorian Gray’ or ‘Victorian Martini’, whilst relaxing in elegant surroundings overlooking the busy concourse of Victoria station.

Visitors to the new destination bar can also sample ‘The 19th Century’ made with Beefeater premium London dry gin, orange juice and dark chocolate infused with baby figs and Madagascan vanilla, which has been shortlisted for the prestigious Beefeater 24 South Regional cocktail championships.

Explosive rum based cocktail including gunpowder tea, the ‘HMS Temeraire’, is named after the first British ship to be equipped with barbette gun shields in 1876 and ‘Cuffs and Buttons’ is a refreshing fruity tipple based on a traditional Victorian recipe which later became known as Southern Comfort.

Reunion’s Head Barman, Paul Bradley, said: “This is the first of a regular series of themed menu offerings that we have designed to celebrate the rich history and heritage of Reunion and the hotel itself. We created each bespoke cocktail to reflect the charm and character of this iconic Grade II listed building and to give visitors a valuable insight into Victorian life. The Grosvenor was one of the largest and grandest hotels in London when it was originally opened in 1862 and our aim is to put Reunion on the map as the destination bar in the capital. The limited edition menu also serves as a souvenir for visitors so that they can feel like they are part of the hotel’s story.”

Reunion bar, which was designed to reflect the hotel’s colourful past with unique decor and art inspired by the golden age of railway travel, was formerly the VIP lounge for first class rail passengers at Victoria station and was often frequented by famous actors including Laurence Olivier and Vivien Leigh. Platform one, which could be accessed directly from the lounge, was famous for the luxurious trains The Orient Express and the Brighton Belle, the latter being depicted in paintings hanging at each end of the room.

The Grosvenor hotel is nearing the end of an extensive £20 million refurbishment which will see it become the official fifth member of the luxury Guoman Hotels collection in January 2012. London’s oldest railway hotel will also celebrate its 150th anniversary next year.

Jumeirah Followers Design The ‘Hotel Of The Future’

Jumeirah Group, the Dubai-based luxury hospitality company and a member of Dubai Holding, recently engaged with the audience at the annual TEDx Dubai event to create the hotel room of the future.

Participants to the conference, as well as keen Tweeps from Dubai, the UAE and the world, shared their creative and original ideas which were then converted from the digital realm to a futuristic masterpiece with the help of talented local artist Zanjeer Salam.

The result was a four metre canvas displaying a variety of unique ideas of what the ‘Hotel of the Future‘ may look like, where it may be situated, and what features and facilities would be available.

The TEDx programme is designed to give communities, organisations and individuals the opportunity to stimulate dialogue at the local level. Jumeirah Group, a sponsor of TedX Dubai, used social media as a channel to engage with the public and merge their virtual ideas to create a physical masterpiece. This unique concept is a reflection of the innovativeness and ingenuity associated with the Jumeirah brand.

The top 10 ideas to be transposed to the canvas were:

– #HotelFuture floats in clouds and has invisible walls and floors to offer a breath-taking view. Food can be teleported.
– The flying hotel that glides travellers around the world in style.
– “Holographic Virtual Personal Assistant” with a menu of caricatures to choose from.
– An underwater hotel with a view of the marine life from the windows.
– It’d be nice to see some pet-friendly hotels.
– Hotel of the future should have iPads in every room.
– The walls of the room would basically be an LED touchscreen that could be dimmed to convert to glass with the view.
– Guests are virtually transported to a destination of their choice by selecting one from Jumeirah hotels’ travel channel.
– Hotel in the Heavens – zero gravity orbital hotel located on the moon. Wake up gazing out at terra firma in repose.
– Each bedroom in the #HotelFuture will have its own robot for cleaning and other services.

Jumeirah captured the experience with an on-site camera crew to capture the ideas as they were illustrated. The video can be viewed on www.jumeirah.com/tedxdubai.

TripAdvisor Can Help Hoteliers, Says Bespoke Hotels

Following recent newspaper articles slating online holiday review site TripAdvisor, Bespoke Hotels has come forward to highlight the usefulness of the website to both current and prospective entrepreneurs within the accommodation industry.

Luxury hotel group Bespoke Hotels has appeared in an article in the November issue of magazine Caterer and Hotelkeeper, in which the hotel’s chairman, Robin Sheppard, has spoken out against those that are unwilling to embrace TripAdvisor.

The review website has caused much upset for hotel owners in the past, with past customers writing unfriendly and sometimes slanderous reviews that could potentially damage the hotel’s reputation. Despite being a part of the hotel industry though, Bespoke Hotels has different views.

Robin Sheppard said in the article: “You’re going to get the occasional angry punter who’s had a bad experience. Sometimes it will be justified and you’ll know it. Sometimes it will be completely unjustified and you’ll know it.

“But if you’re running a great hotel or restaurant, if your service and your food are fantastic nine times out of 10, then your TripAdvisor reviews will be great nine times out of 10.”

Rather than turn against TripAdvisor, Bespoke Hotels is instead urging fellow hoteliers to start realising the importance of the review website, as a majority of good reviews will only stand you in good stead. In fact, an industry report by the World Travel Market in 2010 showed that one in 10 consumers checked reviews on TripAdvisor before booking a hotel. This means that, when looking for a luxury hotel London accommodation, and hotels in other areas of the UK that appear favourably on TripAdvisor, could see a spike in guests.

According to Sheppard, “If TripAdvisor weren’t there as an outlet for the one guest who saw a photo of your plushest suite on your website but ended up in your standard room without a view, then they’d find some other way of complaining about it.”

Those against the use of TripAdvisor have fervently called for all reviews to be checked by website staff before being posted, whereas Bespoke Hotels disagree, saying that: “Owners, managers and executives work hard to keep staff honest and on their toes. So who keeps us on our toes? Why, the reviewers of course.

“Think of TripAdvisor as the industry’s conscience, because it’s here to stay.”

The man who gave the world the massive global number one hit, “Fireflies”, was delighted to score Alchemy Film’s Burj Al Arab promotional clip, ‘Leave the Ordinary Behind’, a 60-second social media video advertisement.

Following a diver as he moves from the rooftop of the world’s most luxurious hotel to the Arabian Gulf below, the Adam Young Burj Al Arab video encourages holidaymakers to immerse themselves in unparalleled luxury.

The Minnesota-based musician has made no secret of his admiration for Dubai’s famous icon, featuring a photo of the property on the cover of his platinum-selling Ocean Eyes album.

Adam said: “I’d been looking high and low for an album cover image that truly encompassed the heart and soul of the music itself, and when I saw that photo, I knew I’d found the perfect one. To me, it just looked like the two words – Ocean Eyes.”

Iain Cooper from Lighthouse, the creative agency behind the promotional film said:
“Adam’s dreamy style and his feelings for the hotel made him the ideal candidate to create the score for the film.

The hotel’s management company, Jumeirah Group, is known for their broader commitment to the arts. They recognized the creative spirit of Adam’s involvement and his fascination with Burj Al Arab.”

Thatcher Brown, Vice President Brand Strategy, said: “Jumeirah is committed to expanding its cultural platform by inspiring artists of all disciplines. For the Closing Ball, Simon Young and Andrew Freeman designed a menu that stayed true to the essence of the hotel’s food and beverage offering, focusing on the very best of seasonal produce. To start, a tian of plum tomato and basil with warm mozzarella fritters, the choice of a roast loin of Southdown lamb with butternut squash puree, Scottish girolles and spring roll of braised leg or Beetroot tortellini with roasted Mediterranean vegetables for main followed by Strawberry and Pistachio Fraiser or dark chocolate “black forest” delice. Andrew Freeman was at the event to ensure that the high standards of the Jumeirah Carlton Tower kitchen are maintained.
